Sugar Free Peanut Butter Cookies

I usually don’t make sugar free baked goods since I love me some delicious sugar, but for fathers day I had to make some thing for my diabetic father since he is awesome!  This recipe has almost nothing in it and is super easy but they turn out pretty tasty.

Ingredients

2 cups peanut butter

1 cup splenda or sugar twin

2 eggs

1 splash vanilla

1/2 cup oatmeal (optional)

Preheat oven to 375

Mix ingredients to a homogeneous mixture, it will be a little crumbly but that is cool. Roll dough into one inch sized balls and use a fork to squish down. Bake for 8-10 mins until the centers are cooked through.

Three way cupcakes

This looks like your everyday ordinary cupcake but nope its a three way cupcake! I got the idea after seeing some “slut brownies” its a recipe that involves cookie dough, Oreo, and brownie batter! These are not those these are white cupcakes, with a Reese’s in the middle, cookie batter at the bottom, then topped with cream cheese frosting.

Preheat oven to 375 degrees

Ingredients

2 sticks butter at room temp

1 cup sugar

1/2 cup packed brown sugar

2 eggs

1 tsp vanilla

2 1/4 cup flour

pinch of salt

1 tsp baking soda

2 cups chocolate chips

Mix the wet ingredients and the dry ingredients separate and then mix together.  Put a small layer of cookie dough at the bottom of your cup cake tin and use the Reese’s to squish it down.

White cupcake 

Ingredients 

1 cup sugar

1/2 cup butter

2 eggs

2 tsp vanilla

1 1/2 cups flour

1/2 cup milk

2 tsp baking powder

Again mix the wet ingredients and the dry separately and then add together. Pour the batter on top of the Reese’s cups until the cupcake tin is almost full leave some room for expansion.

Bake for about 20 mins

Cream Cheese Frosting

4 oz room temp cream cheese

4 oz room temp butter

2 cups powdered sugar

2 tsp vanilla

Just mix all of the cream cheese frosting ingredients together and try not to make too big of a mess. When the cupcakes are cooled off frost and enjoy!

Peanut butter cup bownies

I found this on reddit a few weeks ago and decided that I NEEDED to make them! Probably close to the best cupcake sized thing I have eaten in a while.

Ingredients

3/4 cup sugar

1/4 cup butter

1 tablespoon milk

1 cup chocolate chips of choice plus 1/3 cup

1 egg

1/2 vanilla

1 cup flour

1/4 teaspoon baking soda

3/4 cup peanut butter 

Preheat the oven to 350

In a double boiler melt, chocolate and butter until smooth. Take the mixture off of the heat and add the milk and egg. In another bowl mix the dry ingredients, the flour sugar, and baking soda. Mix both bowls together until mixture is homogeneous. Put the batter into a lined or greased cupcake tin and bake for 13-15 mins. If your toothpick comes out a little wet then that is okay. Wait about 10 mins for your brownies to cool they should dent in a bit, if they don’t then use a spoon to squish the middle to make room for the peanut butter. Spoon in peanut butter and then garnish with the left over chocolate chips and enjoy!

Its my cheese! This recipe is super easy and takes about 15 mins to make but you will be rewarded for your effort in delicious nachos. 

Ingredients:

2 Tbs butter

2 Tbs flour

1 cup milk

7 oz cheese (preferably 7 slices of american cheese)

pinch of salt

Mix the butter and flour in a sauce pan over the stove and heat up until the butter is completely melted and the flour is mixed in smoothly.  Add the milk, cheese, and salt and be sure to constantly stir until all the cheese is melted in and the mixture is smooth.  Then take it off of the heat and serve.

This recipe sounds really gross but its not. When I found this recipe I really didn’t want to try it out since the ingredients that I would have to mix together just sounded gross.  I ended up trying it out since the worst thing that would have happened if I hated it is that I would have wasted Dons mayo, and I hate mayo so Im cool with destroying a bit of it.

Ingredients:

3 cups mayo

1/2 cup soy sauce

3/4 cup sugar (more or less depending on your sweet tooth I usually use a little less)

pinch of pepper

1 1/2 tbs sesame seeds

1 tbs sesame seed oil

pinch of garlic salt

pinch of ginger powder

Mix all of these ingredients together in a large bowl until smooth and boom you have awesome salad dressing.  Be sure to put the left overs into a jar and refrigerate.
